Nothing is better than a chewy brownie. Am I right? When I was growing up people always asked my mom or me for our brownie recipe. To which we responded graciously and told then it was the $.89 brownie mix at Aldi’s that we added off brand chocolate chips too.
At the time, the thought of baking brownies from scratch was too overwhelming so I never made them. I hadn’t quite discovered my love for the kitchen, I was far too busy running around with my best friend singing Josh Groban at the top of our lungs and eating Taco Bell before youth group on Wednesday nights.
Since then I have discovered a love of all things food related. Now I have my go to brownie recipe (an altered version of Pioneer Woman recipe if you must know). But when I am in a pinch, I grab a boxed mix and play with it. I get asked for this recipe more than most. It’s a twist on one of my favorite desserts. It’s pretty simple and that is why it is perfect!
1 boxed brownie mix (i prefer a dark chocolate one because who doesn’t love a rich brownie?)
1/4 cup of your choice of coffee or espresso
1/2 cup of coconut oil, melted (or another Oil of your choice if you aren’t a coconut fan)
1 cup (bag…) of chocolate chips (optional for most, necessity for me)
Then follow the directions on the box! That’s it!
I bake mine in a greased 8×8 pan for 26ish minutes at 350.
Just try not to make yourself sick by eating the entire pan, which I may or may not have done before.
